Withersbrook Blue is made from raw milk from Jasper Hill Farm’s Andersonville herd in Greensboro, Vermont. After an initial aging period in the Cellars at Jasper Hill, the cheese develops delicate blue veining and a dense, creamy paste. The cheese is then soaked with Eden Ice Cider, a dessert cider produced by leaving apple cider outdoors through the Vermont winter. Freezing concentrates the sugars while removing excess water, resulting in a cider with bright acidity and intense apple character. This soaking process gently infuses the cheese, adding fruit and acidity without overwhelming the blue. The result is a cheese that feels balanced and layered, moving from sweet cream and apple to a lingering savory finish.
