Wilde Goat
A blend of High Lawn’s Jersey cow’s milk and Nubian goat’s milk, Wilde Goat brings together richness and brightness in one wheel. Washed in hazy IPA from a nearby brewery, it picks up subtle hoppy and toasty notes while aging. The texture lands somewhere between alpine and aged cheddar, with a dense, slightly sticky feel that makes it hard to stop at one bite. Seasonal release, so it doesn’t stick around long.
