Underpass was East Hill Creamery’s first cheese, named after the underpass they built beneath Route 20A to connect their cow pastures. Inspired by classic Alpine raclette styles, it was designed to melt beautifully while still holding onto that sweet-savory depth. It’s approachable, super versatile, and the kind of cheese that somehow works with nearly everything you throw at it. The Reserve version spends significantly longer in the cave, creating a firmer texture and deeper, more rustic flavor.
