The Gray
This is Mystic’s take on a traditional Cheshire, made with milk from Ayrshire cows. They follow the classic method, milling the curds, salting by hand, and pressing slowly to get that crumbly but still creamy texture. It’s made right near the Connecticut coast, which gives it a subtle mineral edge. The orange color comes from annatto, a natural plant-based dye traditionally used in Cheshire and other British-style cheeses.
