The best cheese story ever! Buckle Up! So the production of stilton was drastically impacted by WWII with people going off to war and leaving the family farm. The impact of this time was this Stilton, which used to have a more relaxed recipe, became made mostly with pasteurized milk because it could sit longer. When Stilton was granted a PDO (1996) it specifically stated that all Stilton had to be made with pasteurized milk. In 2006, cheesemaker Joe Schneider set out to produce a more traditional Stilton from the original recipes using raw milk. It was not cleared by the PDO regulations, but he forged ahead creating Stichelton. Stichelton is named for the old English word for the village of Stilton (the ton of stilton), the place that the original cheese is named for. The dairy is located on the same property as the farm so he can visit the cows and see what their experience is to better understand the cheese. Joe is originally from Syracuse and it’s a cool bit of history to have his cheese in our case!
