High Lawn Farm takes particular pride in the care of their cows. Since their grandparents decided, back in the 1920s, to build a dairy farm of only Jersey cows, their passion has been achieving excellence in all regards, from respecting the Jersey heritage and breeding to the quality of milk produced at the farm. Smorbier is a take on the French classic, Morbier, which is a washed rind cow’s milk cheese with a layer of ash in the middle. It was originally made by farmers/cheese producers for themselves with milk that was left over from Comté production. Instead of an ash layer, this cheese has a line of locally sourced peppers that impart a smokey, spicy kick that is balanced by the creamy, rich paste.
