This cheese is named after Bosia, the village where the creamery is located, the steep hilly terrain of the area was historically too rugged for large cattle farming and families had a few cows and a small flock of sheep; during the spring and summer calving seasons the milk production fluctuated and in order to make a batch of cheese local women were forced to pool the available milk blending the cow and sheep milk in the same bucket. They accidentally found that the cow’s milk provide a sweet buttery base and that the sheep’s milk which was high in fat added a velvety richness
