Le Cousin
A true border-crossing alpine cheese. Le Cousin is made in Switzerland by a member of the Schmidthauser family, then transported to France where another branch of the family ages it in their cellars in Haute-Savoie. That Swiss-French handoff is the whole identity of the cheese. It sits on the milder side of the alpine smear-rind spectrum, closer to Gruyère and Comté than anything aggressively funky. The rind develops a beautiful pink-orange hue and is absolutely worth eating.
