The “Sacred Lady” cheese! Women have been central to European cheesemaking for hundreds of years, but it is still rare to see a woman promoted to head cheesemaker in many European dairies. Fátima Navarro grew up in the cheese world and has over 24 years of experience in the industry. Her family helped found a dairy co-op in El Carpio de Tajo, which produces high quality Murcian goat’s milk. Fátima now serves as master cheesemaker of the co-op with Dama Sagrada as her piece de resistance. La Dama Sagrada is a manchego-style cheese, but made with goat’s milk
