Gorgonzola is produced in two main varieties: Dolce and Piccante. The main difference lies in the ageing process and flavour. Gorgonzola Dolce, with around two months of ageing, is soft and creamy with a mild and slightly sweet taste, ideal for spreading or use in sauces. In contrast, Gorgonzola Piccante matures for a longer period, gaining a firmer texture and a stronger, more intense flavour, perfect for lovers of bold cheeses. The PDO designation of Gorgonzola protects its origin and traditional production methods, ensuring consistently high quality.
