An aged cow’s milk cheese. Very mild and good for melting. In 1999 Manolo Blahnik execs, and partners, George Malkemus and Anthony Yurgaitis bought the farm in 1999 to “save open farmland”. George passed in 2021, but Anthony continues to fund the farm. Arethusa Farm started in 1868
